Method
Mix the regular soy sauce, dark soy sauce, oyster sauce, sugar and white pepper together in a small bowl and set aside.
Place the diced chicken in a bowl and coat it with a tablespoon of the sauce mixture.
Beat the eggs with a pinch of salt and prepare the vegetables.
Heat the cooking oil in a large wok or frying pan over medium-high heat. Add the garlic and cook until fragrant before adding the chicken. Cook until browned and cooked through.
Push the chicken to one side of the pan and pour in the eggs. Stir gently until scrambled.
Remove the chicken and eggs from the pan and set aside.
Add the onion and mixed vegetables to the pan and stir-fry until tender.
Add the cooked rice and break up any clumps. Pour over the remaining sauce and toss until the rice is evenly coated.
Return the chicken and eggs to the pan and mix everything together.
Finish with the spring onions and sesame oil. Toss well and serve immediately.
