Creamy Fettuccine Alfredo

This classic, velvety Alfredo brings the luxury of an authentic Italian trattoria straight to your busy weeknight table in less than half an hour.

Ingredients

  • 2 Tbsp butter
  • 50ml Fresh cream
  • 40g Parmesan cheese, grated
  • 1/2 tsp Italian herbs
  • 2 cloves garlic, crushed
  • Salt and black pepper to taste
  • Fresh parsley to garnish
  • 250g – 500g fettuccine (or pasta of your choice)

Method

  • Melt the butter in a large pan over medium heat, then add the crushed garlic, Italian herbs, and black pepper, frying gently until the garlic softens and becomes fragrant.
  • Pour in the fresh cream and grated Parmesan cheese, stirring continuously as the mixture comes to a gentle simmer, and cook until the sauce thickens beautifully.
  • Toss your freshly boiled, drained pasta into the pan, adding a few tablespoons of the reserved pasta water to loosen the sauce so it coats every single strand perfectly, then garnish with fresh parsley.

Easy Tomato and Cream Penne

Rich, vibrant, and surprisingly simple, this pink-sauce pasta blends deep tomato flavours with smooth cream for a comforting dish that looks beautiful on the plate.

Ingredients

  • 1 package penne or rigatoni
  • 4 Tbsp butter
  • 1/2 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 small can of tomato paste
  • 1 medium carton of heavy cream
  • Chilli flakes, salt, and black pepper to taste
  • Grated parmesan cheese

Method

  • Bring a large pot of salted water to the boil and cook the penne or rigatoni according to the package instructions, ensuring you save a cup of the starchy pasta water before draining.
  • In a separate pan, simmer the butter, chopped onion, and garlic together over medium heat until the onions are completely soft and translucent.
  • Stir in the small can of tomato paste, cooking it down for a minute to deepen the flavour, then pour in the heavy cream and stir until a smooth, rose-coloured sauce forms.
  • Season the sauce with a pinch of chilli flakes, salt, and black pepper to taste.
  • Pour in a splash of the reserved pasta water along with a generous handful of parmesan cheese, toss in the cooked pasta, and stir well until the sauce clings to the ridges of the penne.

Cheesy Mince Pasta Bake

This deeply savoury, spiced beef bake turns standard mince and linguine into a gooey, golden masterpiece that commands attention at the centre of the table.

Ingredients

  • 500g lean beef mince
  • 1 onion, finely chopped
  • 3 Tbsp olive oil
  • 3 cloves garlic, finely chopped
  • 1/2 tsp origanum
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1 sachet Regano pasta sauce (or your favourite tomato-based herb sauce)
  • 250g cooked linguine
  • 1 cup cheese of your choice
  • Salt and black pepper to taste
  • Chilli flakes (optional, for heat)

Method

  • Preheat your oven to 180°C.
  • Heat the olive oil in a large pan over medium-high heat and sauté the chopped onion and garlic until fragrant and soft.
  • Add the lean beef mince to the pan, breaking it up with a spoon, and brown the meat completely before stirring in the origanum, paprika, cayenne pepper, and cumin.
  • Pour in the sachet of pasta sauce, season with salt and black pepper to taste, and let the mixture simmer for a few minutes to allow the spices to meld.
  • Combine the savoury mince sauce with the cooked linguine, transfer the mixture into a baking dish, and top generously with a cup of your preferred cheese and an optional sprinkle of chilli flakes.
  • Bake in the preheated oven for 15 minutes, allowing the cheese to become perfectly melted, bubbling, and golden brown before serving.
