The moment bananas start to brown and soften, most of us already know their fate: banana bread.
It’s practically a household reflex at this point, the go-to solution and the comfort bake. Even though the classic bake will always have its place in our homes, it’s not the only way to turn ripe bananas into something delicious.
Here are some recipes to try when you have overripe bananas beyond banana bread:
2-3 ripe bananas
¾ cup of sugar
2 eggs
250ml of milk
1tsp vanilla extract
½ cup of melted butter
2 cups of raising flour
A pinch of salt
Preheat the oven to 160 degrees Celsius. In a large bowl, mash the bananas and after mashing them, add your sugar and two eggs.
In the same bowl, add your wet ingredients: milk, vanilla extract and melted butter. Then gradually add the raising flour and a pinch of salt into your bowl with the wet ingredients, stirring gently.
Pour your batter evenly into the muffin cups, filling each cup about ⅔ of the way full. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean with a few moist crumbs.
These are best enjoyed with a warm cup of coffee or hot chocolate!

2tbsp of butter
2 ripe bananas sliced into rounds, make sure they are not too thin
1tbsp of honey or maple syrup
½tsp of ground cinnamon (optional)
Pinch of salt
Heat your pan to medium heat and add butter. Once the butter is melted and hot, add your sliced bananas to the pan in a single layer; don’t add a lot of slices.
Cook the bananas for about 2-3 minutes on each side or until golden brown and slightly crispy.
For flavour, drizzle the honey or maple syrup over the slices. You can also sprinkle some cinnamon powder on top and a pinch of salt. You can serve them immediately after cooking as they are or add them onto your toast, oats or yoghurt.

Butter or oil for cooking
In a bowl, mash your bananas until they are smooth. Add the egg along with the milk and mix together.
In a separate bowl, whisk together flour, baking powder and salt.
Add your wet ingredients to the dry ingredients and whisk until smooth. Then heat your butter or oil in a pan over medium heat.
Using a ¼ measuring cup, pour your batter into the pan and cook until the bubbles on top form, then flip and cook until golden brown.
Serve warm, and for some flavour, you can drizzle your honey on top of the pancakes.

1 ripe banana
1 cup of milk (dairy or plant-based)
½ cup of plain or vanilla yogurt
1 or 2 tsp of honey or maple syrup
4-5 ice cubes
Add your banana, milk, yoghurt and honey or maple syrup into the blender. Then add the ice cubes and blend until smooth or creamy.
To enhance the flavour of your smoothie, you can add a tablespoon of peanut butter or ¼ teaspoon of cinnamon.
Pour the smoothie into a glass and enjoy!

150g dark chocolate
Optional toppings: crushed nuts or sprinkles
Slice your banana into rounds and spread a small amount of peanut butter on one slice, and top another slice to make a sandwich.
Continue until your slices are done, then place the sandwiched slices on parchment paper in a tray and freeze for about an hour.
Melt your chocolate and dip each frozen banana halfway or fully into the melted chocolate, depending on your preference.
Add your toppings and freeze again for about 30 minutes, and enjoy!
