Soft Burger Buns
4 cups cake flour
1 tsp baking powder
4 tbs Cremora or any milk powder
1 packet instant dry yeast (10g)
2½ tbs sugar
1 tsp salt
¼ cup oil
2 tbs plain yoghurt (full cream)
¾ cup of lukewarm water
½ cup of lukewarm milk
Mix the sugar and yeast, then add the water and mix well. Let this froth for 10 minutes. Sift the flour, milk powder and salt.
Mix the oil, yoghurt and milk to the yeast mixture, then add it to the flour and mix well to make a soft dough. Knead for about 10 minutes.
Place in an oiled dish, cover then let it rise until doubled in a warm place for about an hour. Break off about 12 pieces and shape it into balls. Place it on a baking tray, not too close to one another. Cover it lightly with a cloth or cling wrap.
Leave it to rise for 30 minutes to an hour, depending on how humid the weather is. Brush the rolls with egg wash (beaten egg, mixed with a little milk). Sprinkle with sesame seeds. Bake in a pre-heated oven of 180°C for about 20 minutes.
Home-made Beef Patties
1 kg beef mince (fatty mince not lean)
1 tbs tomato sauce
1 tbs Worcestershire sauce
1 tbs soya sauce
1 tbs Nando's sauce
1-2 tbs green chillies (or to taste)
1 tbs garlic
1 tsp black pepper
½ tsp lemon pepper
½ tsp garlic and herb
1 tsp Amina's Rombo Rossi spice
1 tsp Portuguese peri peri spice
a pinch of cloves powder
a pinch of white pepper
salt to taste
1 tsp dhania/jeero
1 cup bread crumbs
1 egg
Mix the above well and shape into patties. Freeze a bit, then grill until done. Caramelise some onions and slices of colour peppers. Fry eggs. Place slices of cheese on the patties after it’s dome, then close the lid and let it melt before putting it on the bun. You can add lettuce, tomato slices and a perinaise , Nando's sauce and garlic sauce mix. You can serve with chips for potato wedges.
