How to make crispy roast potatoes in the oven

If there's one method that's stood the test of time, it's the classic oven roast. Done properly, it delivers everything you want in a roast potato: crisp edges, fluffy centres and plenty of flavour.

The process starts with parboiling peeled potatoes until they're just tender enough for a fork to slide in with gentle resistance.

After draining, return them to the pot, cover with a lid and give them a careful shake. It might seem like an odd step, but those rough, uneven edges are exactly what turn deliciously crisp in the oven.

While the potatoes are draining, heat vegetable oil in a roasting tray inside a hot 220°C oven.

Adding the potatoes to already-hot oil creates an immediate sizzle, helping them develop a beautifully crisp crust from the moment they hit the pan.

Season generously with salt and chopped rosemary before roasting for about 45 to 50 minutes, turning every 15 minutes so each side browns evenly.

How to make crispy potatoes in a frying pan

Not every crispy potato needs the oven.

A frying pan is one of the quickest ways to achieve golden, crunchy potatoes, making it ideal for breakfast, brunch or a simple weeknight dinner.

Dice the potatoes into evenly sized cubes so they cook at the same rate.

Before cooking, soak them in cold water for around 10 minutes to wash away excess surface starch, then dry them thoroughly with a clean kitchen towel. Moisture is the enemy of crispness.

Heat a heavy frying pan over medium heat with a little oil, then spread the potatoes into a single layer. Resist the temptation to stir constantly.

Let them sit for a couple of minutes before turning so each side has time to brown properly.

After about 20 minutes, you'll have crisp, golden potatoes with soft centres.

How to make crispy potatoes in the air fryer

It's no surprise the air fryer has become a favourite in so many kitchens. It uses less oil, cooks quickly and produces beautifully crisp potatoes with very little effort.

For the best results, boil the potatoes first with a little salt and a pinch of baking powder.

The baking powder helps break down the outer layer of the potato, creating an extra-crispy coating once cooked.

Drain the potatoes before tossing them with salt, black pepper, garlic powder, onion powder, mixed herbs, paprika, a little cornflour and a splash of olive oil.

The cornflour helps create an even crispier finish.

Cook them at 180°C for about 10 minutes before giving the basket a good shake.

Return them to the air fryer for another eight to 10 minutes until golden brown. If you like an even crunchier finish, increase the temperature to 200°C for the final five minutes.

The result is a crisp shell with a light, fluffy centre that's every bit as satisfying as traditional roast potatoes.

Even experienced cooks occasionally end up with potatoes that refuse to crisp properly. Fortunately, the reasons are usually easy to fix.

Skipping the parboiling stage is one of the biggest mistakes. It softens the inside while creating the rough surface needed for maximum crunch.

Adding wet potatoes to oil also works against you. Excess moisture creates steam instead of crispness, so always let the potatoes dry well after boiling or soaking.

Another common mistake is overcrowding the tray, pan or air fryer basket. Potatoes need space for hot air to circulate. If they're packed too closely together, they'll steam instead of roast.

Finally, don't rush the cooking process. Crispy potatoes need enough time to slowly develop their golden crust.

Tips for the crispiest roast potatoes

The smallest details often make the biggest difference.

Choose a floury potato variety, as these naturally produce fluffier centres and crisp up better than waxy potatoes.

Always start potatoes in cold water before bringing them to the boil. This helps them cook more evenly from the inside out.
